Hops are used to flavour the beer and they also act as a preservative. Peter compared roasting barley to the roasting process that coffee undergoes. He said,"Depending on how much you roast the barley, it gives you the darkness of your malt. So you roast it more, you get a darker malt. You do it less and you get a lighter malt." He then compared adding hops to the process of preparing tea. "With hops, it is kind of like tea leaves. Mix and match the hops and get different flavours", he told us.
